Basil-Avocado BLT Sandwiches
Creamy Carrot-and-Raisin Salad
Ingredients
- 12 slices fully cooked bacon
- 12 slices whole wheat bakery bread, toasted
- 6 Tbsp olive-oil mayonnaise
- 2 avocados, sliced
- 2 tomatoes, sliced
- 2 cups baby arugula
- ¾ cup crumbled goat cheese
- ¼ cup fresh basil leaves
Instructions
- Reheat bacon in a large nonstick skillet until crisp.
- Spread one side of each bread slice with mayonnaise; top 6 slices with bacon, avocado, tomatoes, arugula, cheese, and basil. Top with remaining bread slices, mayonnaise side down.

- ¼ cup olive-oil mayonnaise
- 2 Tbsp lemon juice
- 2 Tbsp honey
- 1 (1-lb) pkg shredded carrots
- ½ cup raisins
- ½ cup walnuts
Side Dish Instructions
- Whisk together mayonnaise, lemon juice, and honey in a large bowl. Add carrots, raisins, and nuts; toss.
