Basil-Avocado BLT Sandwiches

Ingredients

  • 12 slices fully cooked bacon
  • 12 slices whole wheat bakery bread, toasted
  • 6 Tbsp olive-oil mayonnaise
  • 2 avocados, sliced
  • 2 tomatoes, sliced
  • 2 cups baby arugula
  • ¾ cup crumbled goat cheese
  • ¼ cup fresh basil leaves

Instructions

  1. Reheat bacon in a large nonstick skillet until crisp.
  2. Spread one side of each bread slice with mayonnaise; top 6 slices with bacon, avocado, tomatoes, arugula, cheese, and basil. Top with remaining bread slices, mayonnaise side down.

  • ¼ cup olive-oil mayonnaise
  • 2 Tbsp lemon juice
  • 2 Tbsp honey
  • 1 (1-lb) pkg shredded carrots
  • ½ cup raisins
  • ½ cup walnuts

Side Dish Instructions

  1. Whisk together mayonnaise, lemon juice, and honey in a large bowl. Add carrots, raisins, and nuts; toss.
