Winter Chicken Bowls

Ingredients
- 1 (10-oz) pkg frozen riced cauliflower and sweet potatoes
- ½ lb boneless, skinless chicken thighs, cubed
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ cup chopped onion
- 1 Tbsp olive oil
- ½ (5-oz) pkg baby kale
- ½ tsp dried rubbed sage
- 3 Tbsp honey apple cider vinaigrette (or use another vinaigrette)
- ⅓ cup crumbled goat cheese
Instructions
- Cook riced vegetables according to package directions.
- Meanwhile, sprinkle chicken with salt and pepper. Cook chicken and onion in hot oil in a large skillet over medium-high heat 7 minutes. Stir in kale and sage; cook 3 minutes or until kale wilts.
- Add vinaigrette; cook 2 minutes or until thoroughly heated. Stir in cheese. Serve over riced vegetables.
