Winter Chicken Bowls

Ingredients

  • 1 (10-oz) pkg frozen riced cauliflower and sweet potatoes
  • ½ lb boneless, skinless chicken thighs, cubed
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ½ cup chopped onion
  • 1 Tbsp olive oil
  • ½ (5-oz) pkg baby kale
  • ½ tsp dried rubbed sage
  • 3 Tbsp honey apple cider vinaigrette (or use another vinaigrette)
  • ⅓ cup crumbled goat cheese

Instructions

  1. Cook riced vegetables according to package directions.
  2. Meanwhile, sprinkle chicken with salt and pepper. Cook chicken and onion in hot oil in a large skillet over medium-high heat 7 minutes. Stir in kale and sage; cook 3 minutes or until kale wilts.
  3. Add vinaigrette; cook 2 minutes or until thoroughly heated. Stir in cheese. Serve over riced vegetables.
