Southern Pork and Tomato Grilled Cheese Sandwich

Ingredients

  • 1 (16-oz) pkg bacon
  • 12 slices home-style white bread
  • 12 slices smoked Cheddar cheese
  • 1½ lb chopped smoked pork
  • 1 cup barbecue sauce
  • 2 tomatoes, thinly sliced
  • Quick Pickled Red Onions
  • ½ cup butter, softened
  • 1 (5-oz) pkg baby arugula
  • Quick Pickled Red Onions:
  • 1 cup apple cider vinegar
  • 1 Tbsp honey
  • 1 tsp kosher salt
  • 1 large red onion, thinly sliced

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels.
  2. Top half of bread slices with 1 slice cheese.
  3. Arrange pork over cheese, and drizzle with barbecue sauce .
  4. Top with tomato slices, desired amount of Quick Pickled Red Onions, and bacon.
  5. Place remaining cheese slices over bacon, and cover with remaining bread slices.
  6. Spread softened butter over outsides of sandwiches.
  7. Cook sandwiches in a large nonstick skillet over medium-low heat, 4 to 5 minutes per side or until bread is toasted and cheese is melted.
  8. Separate bread slices, and add arugula to each.
  9. For Quick Pickled Red Onions:.
  10. Combine vinegar, honey, and salt in a medium bowl; add onion. Cover and let stand 1 hour or store, covered, in refrigerator up to 2 weeks.
