Loaded Taco Grilled Cheese

Ingredients

  • 1 lb ground beef
  • 1 (1-oz) packet taco seasoning mix
  • 12 thick slices sourdough or jalapeño cheese bread
  • 12 slices Monterey Jack cheese with peppers
  • 3 avocados, peeled, pitted, and thinly sliced
  • 2 tomatoes, thinly sliced
  • 1 bunch green onions, thinly sliced
  • ½ cup butter, softened
  • Lime Chipotle Sauce:
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 1 Tbsp fresh lime juice
  • ½ tsp ground chipotle chile pepper

Instructions

  1. Cook ground beef in a large skillet over medium heat until beef is browned and crumbly; drain and return to skillet.
  2. Add taco seasoning mix, and ⅓ cup water to skillet; cook over medium heat until beef mixture is thickened and most of liquid is evaporated.
  3. Top half of bread slices with 1 cheese slice and desired amount of taco meat.
  4. Arrange avocado slices, tomato slices, and desired amount of green onion over meat. Top with remaining cheese slices.
  5. Cover with remaining bread slices.
  6. Spread softened butter over outsides of sandwiches.
  7. Cook sandwiches in a large nonstick skillet over medium-low heat, 4 to 5 minutes per side or until bread is toasted and cheese is melted.
  8. Serve with Lime Chipotle Sauce for dipping.
  9. For Lime Chipotle Sauce:.
  10. Stir together mayonnaise, sour cream, lime juice, and chile pepper.
  11. Store, covered, in refrigerator up to 3 days.
