Baked Eggs with Prosciutto and Basil

Ingredients

  • 8 large eggs
  • 8 (0.5-oz) slices prosciutto
  • ½ cup shredded Cheddar cheese
  • ¼ tsp pepper
  • ¼ cup chopped fresh basil

Instructions

  1. Preheat oven to 350°F. Coat 4 muffin cups or 4 (6- to 8-oz) ramekins with cooking spray.
  2. Fit 2 slices of prosciutto into each of 4 muffin cups or ramekins, shaping slices to look like cups. Divide cheese among cups; crack 2 eggs in each muffin cup or ramekin; sprinkle with pepper.
  3. Bake 15 to 18 minutes or until eggs are set. Sprinkle with basil before serving.
