Italian Sausage and Mushroom Frittata

Ingredients

  • 2 basil-garlic chicken sausage links, sliced
  • 1 (8-oz) pkg sliced mushrooms
  • 3 Tbsp olive oil
  • 6 large eggs
  • ½ tsp salt
  • ¼ tsp crushed red pepper
  • 1 cup halved grape tomatoes

Instructions

  1. Preheat broiler. Cook sausage and mushrooms in hot oil in a 10-inch ovenproof skillet over medium-high heat 6 to 8 minutes or until sausage is no longer pink and liquid has evaporated.
  2. Whisk together eggs, salt, and red pepper. Reduce heat to medium; add egg mixture, and stir quickly. Cook, without stirring, until eggs begin to set. Sprinkle with tomatoes.
  3. Broil 3 to 5 minutes or until top is golden and eggs are set.
