Italian Sausage and Mushroom Frittata
Ingredients
- 2 basil-garlic chicken sausage links, sliced
- 1 (8-oz) pkg sliced mushrooms
- 3 Tbsp olive oil
- 6 large eggs
- ½ tsp salt
- ¼ tsp crushed red pepper
- 1 cup halved grape tomatoes
Instructions
- Preheat broiler. Cook sausage and mushrooms in hot oil in a 10-inch ovenproof skillet over medium-high heat 6 to 8 minutes or until sausage is no longer pink and liquid has evaporated.
- Whisk together eggs, salt, and red pepper. Reduce heat to medium; add egg mixture, and stir quickly. Cook, without stirring, until eggs begin to set. Sprinkle with tomatoes.
- Broil 3 to 5 minutes or until top is golden and eggs are set.
