Kale-Goat Cheese Scrambled Egg Lettuce Wraps
Ingredients
- 1 clove garlic, minced
- 2 Tbsp olive oil, divided
- 4 cups chopped kale
- 8 large eggs
- ¼ tsp dried oregano
- ½ tsp salt
- ½ tsp pepper
- ¼ cup pitted halved kalamata olives
- 8 romaine lettuce leaves
- ½ cup crumbled goat cheese
Instructions
- Cook garlic in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 30 seconds. Add kale; cook 1 minute or until wilted.
- Whisk together eggs, oregano, salt, and pepper.
- Add 1 Tbsp oil, eggs, and olives to skillet, stirring gently. Reduce heat to medium; cook 5 minutes or until eggs are set, stirring gently.
- Arrange lettuce leaves in 4 stacks on a work surface; fill with egg mixture and cheese. Fold and eat like a taco.
