Kale-Goat Cheese Scrambled Egg Lettuce Wraps

Ingredients

  • 1 clove garlic, minced
  • 2 Tbsp olive oil, divided
  • 4 cups chopped kale
  • 8 large eggs
  • ¼ tsp dried oregano
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ cup pitted halved kalamata olives
  • 8 romaine lettuce leaves
  • ½ cup crumbled goat cheese

Instructions

  1. Cook garlic in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 30 seconds. Add kale; cook 1 minute or until wilted.
  2. Whisk together eggs, oregano, salt, and pepper.
  3. Add 1 Tbsp oil, eggs, and olives to skillet, stirring gently. Reduce heat to medium; cook 5 minutes or until eggs are set, stirring gently.
  4. Arrange lettuce leaves in 4 stacks on a work surface; fill with egg mixture and cheese. Fold and eat like a taco.
