Pears SlicesIngredients
- ¼ cup mayonnaise
- 1 Tbsp finely diced roasted red pepper
- 1 Tbsp chopped fresh basil
- 1 tsp lemon juice
- ½ tsp pepper
- 1 lb low-sodium roasted turkey breast slices
- 1 cup arugula
- 1 small zucchini, cut into thin sticks
- ½ cup shredded carrots
Instructions
- Combine mayonnaise, red pepper, basil, lemon juice, and pepper.
- Stack turkey into 8 piles on a work surface. Top each with red pepper spread, arugula, zucchini, and carrots.
- Roll up; secure with toothpicks.
