Blackened Ribeye Salad

Ingredients

  • 1 (¾-lb) ribeye steak
  • 2 Tbsp extra virgin olive oil, divided
  • 1 tsp blackened seasoning
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • ½ (5-oz) pkg spring mix
  • ½ cup grape tomatoes, halved
  • 3 Tbsp crumbled feta cheese
  • 1 Tbsp balsamic vinegar
  • ½ tsp Dijon mustard

Instructions

  1. Preheat grill to medium-high heat. Rub steak with ½ Tbsp oil; sprinkle with blackened seasoning and ⅛ tsp each salt and pepper.
  2. Grill steak, covered, 6 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
  3. Combine salad greens, tomatoes, and cheese in a bowl. Whisk together 1½ Tbsp oil, vinegar, mustard, and ⅛ tsp each salt and pepper. Pour over greens; toss. Top with steak.
