Blackened Ribeye Salad

Ingredients
- 1 (¾-lb) ribeye steak
- 2 Tbsp extra virgin olive oil, divided
- 1 tsp blackened seasoning
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- ½ (5-oz) pkg spring mix
- ½ cup grape tomatoes, halved
- 3 Tbsp crumbled feta cheese
- 1 Tbsp balsamic vinegar
- ½ tsp Dijon mustard
Instructions
- Preheat grill to medium-high heat. Rub steak with ½ Tbsp oil; sprinkle with blackened seasoning and ⅛ tsp each salt and pepper.
- Grill steak, covered, 6 minutes per side or to desired doneness. Let stand 5 minutes before thinly slicing across the grain.
- Combine salad greens, tomatoes, and cheese in a bowl. Whisk together 1½ Tbsp oil, vinegar, mustard, and ⅛ tsp each salt and pepper. Pour over greens; toss. Top with steak.
