Mediterranean Quinoa and Chickpea Salad
Fresh Fruit Toss
Ingredients
- 1 (14-oz) pkg quinoa, rinsed
- 2 (15.5-oz) cans chickpeas, drained and rinsed
- 1 pint grape tomatoes, halved
- 1 English cucumber, chopped
- ½ cup halved pitted kalamata olives
- ½ cup crumbled vegan feta cheese
- ½ cup thinly sliced red onion
- ½ cup chopped fresh basil
- ¼ cup olive oil
- 3 Tbsp vegan red wine vinegar
- ½ tsp pepper
- ¼ tsp salt
Instructions
- Prepare quinoa according to package directions; rinse under cold water to cool.
- Transfer to a bowl. Stir in remaining ingredients. Chill until ready to serve.
Side Dish Ingredients
- 1 (16-oz) pkg strawberries, sliced
- 3 kiwifruit, peeled and sliced
- 2 navel oranges, peeled and sliced
- 1 cup sliced almonds
Side Dish Instructions
- Toss together all ingredients in a bowl.
