Mediterranean Quinoa and Chickpea Salad

Ingredients

  • 1 (14-oz) pkg quinoa, rinsed
  • 2 (15.5-oz) cans chickpeas, drained and rinsed
  • 1 pint grape tomatoes, halved
  • 1 English cucumber, chopped
  • ½ cup halved pitted kalamata olives
  • ½ cup crumbled vegan feta cheese
  • ½ cup thinly sliced red onion
  • ½ cup chopped fresh basil
  • ¼ cup olive oil
  • 3 Tbsp vegan red wine vinegar
  • ½ tsp pepper
  • ¼ tsp salt

Instructions

  1. Prepare quinoa according to package directions; rinse under cold water to cool.
  2. Transfer to a bowl. Stir in remaining ingredients. Chill until ready to serve.

Side Dish Ingredients

  • 1 (16-oz) pkg strawberries, sliced
  • 3 kiwifruit, peeled and sliced
  • 2 navel oranges, peeled and sliced
  • 1 cup sliced almonds

  1. Toss together all ingredients in a bowl.
