Ingredients
- 2 cups quinoa
- 3 Tbsp olive oil
- 2 Tbsp fresh lime juice
- 2 cloves garlic, minced
- 1 Tbsp salt-free Southwest seasoning (or use fajita seasoning and omit salt)
- ½ tsp salt
- 1 (15-oz) can black beans, drained and rinsed
- 1 (15-oz) can cannellini beans, drained and rinsed
- 2 tomatoes, diced
- ½ cup chopped fresh cilantro
- ⅓ cup diced red onion
Instructions
- Cook quinoa according to package directions.
- Meanwhile, whisk together oil, lime juice, garlic, seasoning, and salt in a small bowl.
- Toss together quinoa, oil mixture, beans and remaining ingredients in a large bowl.
