Ingredients

  • 2 cups quinoa
  • 3 Tbsp olive oil
  • 2 Tbsp fresh lime juice
  • 2 cloves garlic, minced
  • 1 Tbsp salt-free Southwest seasoning (or use fajita seasoning and omit salt)
  • ½ tsp salt
  • 1 (15-oz) can black beans, drained and rinsed
  • 1 (15-oz) can cannellini beans, drained and rinsed
  • 2 tomatoes, diced
  • ½ cup chopped fresh cilantro
  • ⅓ cup diced red onion

Instructions

  1. Cook quinoa according to package directions.
  2. Meanwhile, whisk together oil, lime juice, garlic, seasoning, and salt in a small bowl.
  3. Toss together quinoa, oil mixture, beans and remaining ingredients in a large bowl.
