Ingredients

  • 4 bell peppers (any color), halved and seeded
  • 1½ lb flank steak (or use skirt steak)
  • 3 Tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lime, cut into wedges

Instructions

  1. Preheat grill to medium-high heat. Rub peppers and steak with oil and garlic; sprinkle with salt and pepper, if desired.
  2. Grill steak 5 minutes per side or to desired doneness. Grill peppers 4 minutes per side or until tender; cut into large slices.
  3. Let steak stand at least 10 minutes. Thinly slice steak across the grain before serving.
  4. Serve steak and grilled peppers with Cilantro Pesto recipe and lime wedges.

Side Dish Ingredients

  • 1 bunch fresh cilantro
  • 1 Tbsp lemon zest
  • ½ tsp salt
  • 1 clove garlic
  • ½ jalapeño pepper, seeds removed (optional)
  • ¼ cup olive oil

Side Dish Instructions

  1. Cut cilantro leaves from stems; discard stems.
  2. Process cilantro, lemon zest, salt, garlic, and jalapeño in a food processor until finely ground.
  3. With motor running, slowly pour oil through food chute, and process until smooth .
  4. Serve pesto with steak.
