Grilled Flank Steak and Peppers
Cilantro Pesto

Ingredients
- 4 bell peppers (any color), halved and seeded
- 1½ lb flank steak (or use skirt steak)
- 3 Tbsp olive oil
- 3 cloves garlic, minced
- 1 lime, cut into wedges
Instructions
- Preheat grill to medium-high heat. Rub peppers and steak with oil and garlic; sprinkle with salt and pepper, if desired.
- Grill steak 5 minutes per side or to desired doneness. Grill peppers 4 minutes per side or until tender; cut into large slices.
- Let steak stand at least 10 minutes. Thinly slice steak across the grain before serving.
- Serve steak and grilled peppers with Cilantro Pesto recipe and lime wedges.
