Italian Sausage and Spinach Soup
Ingredients
- 12 oz ground Italian pork sausage
- 1 Tbsp olive oil
- 1 (32-oz) carton low-sodium chicken broth
- 1 cup water
- 1 (14.5-oz) can fire-roasted diced tomatoes
- ½ onion, chopped
- 4 cloves garlic, minced
- 1 Tbsp dried oregano
- ½ tsp salt
- 1 (5-oz) pkg baby spinach
- ⅓ cup freshly grated Parmesan cheese
Instructions
- Cook sausage in hot oil in a large skillet over medium-high heat 8 minutes or until browned and crumbly. Transfer sausage and drippings to a 5- or 6-quart slow cooker. Stir in broth, water, tomatoes, onion, garlic, oregano, and salt.
- Cover and cook on LOW 5 to 6 hours. Add spinach just before serving, stirring until wilted.
- Sprinkle each serving with cheese.
