Easy Taco Bowls

Ingredients

  • 1 lb ground beef
  • 1 (1-oz) envelope taco seasoning mix
  • 2 Tbsp water
  • 1 (12-oz) pkg frozen cauliflower rice
  • 2 green onions, chopped
  • 3 cups chopped romaine lettuce
  • 1½ cups shredded Cheddar cheese
  • ½ cup fresh salsa
  • 1 cup diced or sliced avocado

Instructions

  1. Cook beef in a large nonstick skillet over medium heat 8 minutes or until no longer pink. Add taco seasoning and water, stirring to combine. Cook 2 minutes or until slightly thickened.
  2. Cook cauliflower rice according to package directions. Stir onions into cauliflower rice.
  3. Arrange lettuce in 4 bowls. Top with cauliflower mixture, beef mixture, cheese, salsa, and avocado.
