Easy Taco Bowls
Ingredients
- 1 lb ground beef
- 1 (1-oz) envelope taco seasoning mix
- 2 Tbsp water
- 1 (12-oz) pkg frozen cauliflower rice
- 2 green onions, chopped
- 3 cups chopped romaine lettuce
- 1½ cups shredded Cheddar cheese
- ½ cup fresh salsa
- 1 cup diced or sliced avocado
Instructions
- Cook beef in a large nonstick skillet over medium heat 8 minutes or until no longer pink. Add taco seasoning and water, stirring to combine. Cook 2 minutes or until slightly thickened.
- Cook cauliflower rice according to package directions. Stir onions into cauliflower rice.
- Arrange lettuce in 4 bowls. Top with cauliflower mixture, beef mixture, cheese, salsa, and avocado.
