Lemony Ricotta and Strawberry Toasts

Ingredients

  • 2½ cups sliced strawberries
  • 2 Tbsp honey
  • 1 cup ricotta cheese
  • 1 Tbsp lemon zest
  • 8 (1-oz) slices whole-grain sandwich bread, toasted

Instructions

  1. Stir together strawberries and honey in a bowl; let stand 10 minutes.
  2. Meanwhile, stir together ricotta and lemon zest.
  3. Spread ricotta mixture over one side of each bread slice; top with strawberries.
