PB & J Oatmeal

Ingredients

  • 4 cups water
  • 1 cup steel-cut oats
  • 1 tsp ground cinnamon
  • 1 tsp pure vanilla extract
  • ¼ tsp salt
  • ¼ cup creamy peanut butter (or use almond butter)
  • 2 Tbsp reduced-sugar strawberry preserves
  • 1 cup strawberries, quartered
  • ¼ cup roasted unsalted peanuts, chopped

Instructions

  1. Bring water to a boil in a large saucepan. Stir in oats, cinnamon, vanilla and salt; reduce heat to low.
  2. Simmer, uncovered, 25 to 30 minutes or until oats are cooked to desired doneness, stirring occasionally. Stir in peanut butter.
  3. Divide oatmeal among 4 bowls. Top each serving with preserves, berries, and nuts.
