PB & J Oatmeal
Ingredients
- 4 cups water
- 1 cup steel-cut oats
- 1 tsp ground cinnamon
- 1 tsp pure vanilla extract
- ¼ tsp salt
- ¼ cup creamy peanut butter (or use almond butter)
- 2 Tbsp reduced-sugar strawberry preserves
- 1 cup strawberries, quartered
- ¼ cup roasted unsalted peanuts, chopped
Instructions
- Bring water to a boil in a large saucepan. Stir in oats, cinnamon, vanilla and salt; reduce heat to low.
- Simmer, uncovered, 25 to 30 minutes or until oats are cooked to desired doneness, stirring occasionally. Stir in peanut butter.
- Divide oatmeal among 4 bowls. Top each serving with preserves, berries, and nuts.
