Chicken Tabbouleh Toss

Ingredients
- 1 cup bulgur wheat
- 1 cup boiling water
- ½ cup lemon juice
- ¼ cup extra virgin olive oil
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 1¾ cups shredded rotisserie chicken
- 1 pint grape tomatoes, halved
- 1 English cucumber, diced
- 1 cup chopped fresh parsley
- 4 green onions, chopped
Instructions
- Place bulgur and boiling water in a small bowl; let stand 20 minutes.
- Meanwhile, whisk together lemon juice, oil, garlic, salt and pepper.
- Combine bulgur, chicken, tomatoes, cucumber, parsley and green onions in a large bowl.
- Drizzle with dressing. Toss to coat. Chill until ready to serve.
