Chicken Tabbouleh Toss

Ingredients

  • 1 cup bulgur wheat
  • 1 cup boiling water
  • ½ cup lemon juice
  • ¼ cup extra virgin olive oil
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 1¾ cups shredded rotisserie chicken 
  • 1 pint grape tomatoes, halved
  • 1 English cucumber, diced
  • 1 cup chopped fresh parsley
  • 4 green onions, chopped

Instructions

  1. Place bulgur and boiling water in a small bowl; let stand 20 minutes.
  2. Meanwhile, whisk together lemon juice, oil, garlic, salt and pepper.
  3. Combine bulgur, chicken, tomatoes, cucumber, parsley and green onions in a large bowl.
  4. Drizzle with dressing. Toss to coat. Chill until ready to serve.
