Roast Beef and Blue Cheese Subs with Quick Pickled Onions

Ingredients

  • 1 cup apple cider vinegar
  • 1 Tbsp honey
  • 1½ tsp kosher salt
  • 1 red onion, thinly sliced
  • ¼ cup reduced-fat mayonnaise
  • 4 (1.6-oz) 100% whole wheat hot dog buns
  • ½ lb deli sliced roast beef
  • 2 cups baby arugula (or use spinach)
  • 1 small carrot, grated
  • ¼ cup crumbled blue cheese

Instructions

  1. Combine vinegar, honey and salt; add onion. Let stand at room temperature 1 hour. Drain.
  2. Spread mayonnaise inside hot dog buns; fill buns with roast beef, arugula, carrot, onions and cheese.

  • 2 cups seedless green grapes

Side Dish Instructions

  1. Chill grapes until ready to serve.
