Roast Beef and Blue Cheese Subs with Quick Pickled Onions
Chilled Green Grapes
Ingredients
- 1 cup apple cider vinegar
- 1 Tbsp honey
- 1½ tsp kosher salt
- 1 red onion, thinly sliced
- ¼ cup reduced-fat mayonnaise
- 4 (1.6-oz) 100% whole wheat hot dog buns
- ½ lb deli sliced roast beef
- 2 cups baby arugula (or use spinach)
- 1 small carrot, grated
- ¼ cup crumbled blue cheese
Instructions
- Combine vinegar, honey and salt; add onion. Let stand at room temperature 1 hour. Drain.
- Spread mayonnaise inside hot dog buns; fill buns with roast beef, arugula, carrot, onions and cheese.

- 2 cups seedless green grapes
Side Dish Instructions
- Chill grapes until ready to serve.
