Spicy Southwest Chicken Salad
Ingredients
- 2 bone-in chicken breasts
- 3 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup mayonnaise
- 1 Tbsp lime juice
- 1 tsp ground chipotle chile pepper
- ¼ tsp garlic powder
- 1 stalk celery, thinly sliced
- ½ red bell pepper, minced
- 2 green onions, sliced
Instructions
- Preheat oven to 375°F. Remove skin from chicken. Place chicken breasts in a baking dish; drizzle with oil, and sprinkle with salt and pepper.
- Bake 28 to 30 minutes or until chicken is done; cool. Chop chicken.
- Combine mayonnaise, lime juice, chipotle pepper, and garlic powder in a bowl. Add chicken, celery, bell pepper, and onions; stir well. Chill until ready to serve.
