Spicy Southwest Chicken Salad

Ingredients

  • 2 bone-in chicken breasts
  • 3 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup mayonnaise
  • 1 Tbsp lime juice
  • 1 tsp ground chipotle chile pepper
  • ¼ tsp garlic powder
  • 1 stalk celery, thinly sliced
  • ½ red bell pepper, minced
  • 2 green onions, sliced

Instructions

  1. Preheat oven to 375°F. Remove skin from chicken. Place chicken breasts in a baking dish; drizzle with oil, and sprinkle with salt and pepper.
  2. Bake 28 to 30 minutes or until chicken is done; cool. Chop chicken.
  3. Combine mayonnaise, lime juice, chipotle pepper, and garlic powder in a bowl. Add chicken, celery, bell pepper, and onions; stir well. Chill until ready to serve.
