Creamy Dijon-Lime Chicken Thighs
Goat Cheese-Cilantro Cauliflower Mash
Ingredients
- 8 (3-oz) boneless, skin-on chicken thighs (or use boneless, skinless chicken breasts or tenderloins)
- ¼ cup Dijon mustard
- 2 Tbsp mayonnaise
- 1 clove garlic, minced
- 1 Tbsp lime juice
- 1 tsp lime zest
- ½ tsp kosher salt
- ¼ tsp pepper
Instructions
- Preheat oven to 400°F. Place chicken in an 11-x 7-inch baking dish coated with cooking spray.
- Combine mustard, mayonnaise, garlic, lime juice, lime zest, salt, and pepper in a small bowl. Pour over chicken. Toss.
- Bake 25 to 30 minutes or until chicken is done. Drizzle pan juices over chicken before serving.

- 1 (16-oz) pkg frozen cauliflower florets
- ½ cup crumbled goat cheese
- 6 Tbsp heavy cream
- ½ tsp kosher salt
- ¼ tsp pepper
- ¼ cup chopped fresh cilantro
Side Dish Instructions
- Cook cauliflower in microwave according to package directions.
- Place in a large bowl; add cheese and cream. Blend with a handheld mixer or mash with a fork. Stir in salt, pepper, and cilantro.
