Broccoli-Mushroom Skillet

Ingredients
- 2 (12-oz) pkg broccoli florets
- 3 (3.5-oz) pouches boil-in-bag brown rice
- 1½ lb plant-based ground beef
- 1 (16-oz) pkg sliced mushrooms
- 2 Tbsp olive oil
- 2 (10.5-oz) cans cream of mushroom soup
- 2 Tbsp chopped fresh thyme
Instructions
- Cook broccoli and rice according to package directions.
- Meanwhile, cook plant-based beef and mushrooms in hot oil in a large skillet over medium-high heat 8 minutes or until mushrooms are browned and plant-based beef is done. Stir in soup and broccoli; cook 3 minutes or until thoroughly heated.
- Serve beef mixture over rice; sprinkle with thyme.
