Broccoli-Mushroom Skillet

Ingredients

  • 2 (12-oz) pkg broccoli florets
  • 3 (3.5-oz) pouches boil-in-bag brown rice
  • 1½ lb plant-based ground beef
  • 1 (16-oz) pkg sliced mushrooms
  • 2 Tbsp olive oil
  • 2 (10.5-oz) cans cream of mushroom soup
  • 2 Tbsp chopped fresh thyme

Instructions

  1. Cook broccoli and rice according to package directions.
  2. Meanwhile, cook plant-based beef and mushrooms in hot oil in a large skillet over medium-high heat 8 minutes or until mushrooms are browned and plant-based beef is done. Stir in soup and broccoli; cook 3 minutes or until thoroughly heated.
  3. Serve beef mixture over rice; sprinkle with thyme.
