Smoked Salmon and Goat Cheese Eggs
Fresh RaspberriesIngredients
- 8 large eggs
- ½ tsp salt
- ½ tsp pepper
- 3 Tbsp olive oil
- ½ cup crumbled goat cheese
- 4 oz sliced smoked salmon
- 1 Tbsp finely chopped fresh chives
Instructions
- Whisk together eggs, salt, and pepper.
- Heat oil in a large skillet over medium heat; pour in eggs. Cook 1 to 2 minutes, undisturbed, until eggs start to set around the edges.
- Add cheese and salmon. Using a spatula, gently push eggs towards center of skillet. Repeat motion every 30 seconds until eggs are cooked to desired doneness.
- Divide eggs among 4 plates; sprinkle with chives.
