Smoked Salmon and Goat Cheese Eggs

Ingredients

  • 8 large eggs
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil
  • ½ cup crumbled goat cheese
  • 4 oz sliced smoked salmon
  • 1 Tbsp finely chopped fresh chives

Instructions

  1. Whisk together eggs, salt, and pepper.
  2. Heat oil in a large skillet over medium heat; pour in eggs. Cook 1 to 2 minutes, undisturbed, until eggs start to set around the edges.
  3. Add cheese and salmon. Using a spatula, gently push eggs towards center of skillet. Repeat motion every 30 seconds until eggs are cooked to desired doneness.
  4. Divide eggs among 4 plates; sprinkle with chives.
