Ground Chicken and Beet Hash
Ingredients
- 1½ lb ground chicken (or use ground turkey)
- 2 tsp poultry seasoning
- ½ tsp salt
- ⅛ tsp crushed red pepper
- ¼ cup olive oil, divided
- 1 cup chopped onion
- 1 small green bell pepper, chopped
- 1 cup peeled, grated raw beets (about ½ lb)
- ⅓ cup low-sodium chicken broth
Instructions
- Cook chicken, poultry seasoning, salt, and red pepper in 2 Tbsp hot oil in a large skillet over medium-high heat 8 minutes or until browned and crumbly. Remove from skillet; keep warm. Wipe skillet clean.
- Cook onion in 2 Tbsp hot oil in skillet 3 to 4 minutes or until onion is tender.
- Add bell pepper and beets; cook 4 to 5 minutes or until vegetables are tender.
- Stir in broth and chicken; cook 2 to 3 minutes or until liquid has evaporated.
