Ground Chicken and Beet Hash

Ingredients

  • 1½ lb ground chicken (or use ground turkey)
  • 2 tsp poultry seasoning
  • ½ tsp salt
  • ⅛ tsp crushed red pepper
  • ¼ cup olive oil, divided
  • 1 cup chopped onion
  • 1 small green bell pepper, chopped
  • 1 cup peeled, grated raw beets (about ½ lb)
  • ⅓ cup low-sodium chicken broth

Instructions

  1. Cook chicken, poultry seasoning, salt, and red pepper in 2 Tbsp hot oil in a large skillet over medium-high heat 8 minutes or until browned and crumbly. Remove from skillet; keep warm. Wipe skillet clean.
  2. Cook onion in 2 Tbsp hot oil in skillet 3 to 4 minutes or until onion is tender.
  3. Add bell pepper and beets; cook 4 to 5 minutes or until vegetables are tender.
  4. Stir in broth and chicken; cook 2 to 3 minutes or until liquid has evaporated.
