Sweet and Sour Chicken

Ingredients

  • ½ lb boneless, skinless chicken breasts, cubed
  • 1 red bell pepper, cut into 1-inch pieces
  • ½ cup cubed pineapple
  • 1 green onion, cut into 1-inch pieces
  • ½ cup sweet and sour sauce
  • 2 Tbsp sesame seeds (optional)

Instructions

  1. Sprinkle chicken with salt, if desired. Cook chicken in a large skillet coated with cooking spray over medium-high heat 5 minutes or until browned.
  2. Add bell pepper, pineapple, and onion; cook 5 minutes or until browned.
  3. Add sauce; cook 2 minutes or until thoroughly heated. Serve chicken mixture over rice; sprinkle with sesame seeds, if desired.
