Pork Bolognese

Ingredients

  • 1 large onion, chopped
  • 2 large carrots, chopped
  • 8 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 (6-oz) can BPA-free organic tomato paste
  • 1 cup white wine
  • 1½ lb lean ground pork
  • 1½ lb lean ground beef
  • 1 (12-oz) can evaporated milk
  • 1 bay leaf
  • 1 tsp kosher salt
  • 1 tsp pepper

Instructions

  1. Cook onion, carrots, and garlic in hot oil in a large skillet over medium-high heat 4 minutes. Add tomato paste; cook 2 to 3 minutes, stirring often. Add wine, and cook 2 minutes. Transfer mixture to a 5-or 6-quart slow cooker.
  2. Add pork and beef to skillet; cook 5 minutes over medium-high heat or until browned and crumbly.
  3. Add meat, evaporated milk, bay leaf, salt, and pepper to cooker; stir. Cover and cook on LOW 4 hours; remove bay leaf before serving.

  • 2 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Cook garlic, zucchini, seasoning, salt, and pepper in hot oil in a large nonstick skillet over medium-high heat 8 minutes or until zucchini is tender, adding 1 to 2 Tbsp water, if necessary, to avoid sticking.
