Pork Bolognese
Italian Zucchini Noodles
Ingredients
- 1 large onion, chopped
- 2 large carrots, chopped
- 8 cloves garlic, minced
- 1 Tbsp olive oil
- 1 (6-oz) can BPA-free organic tomato paste
- 1 cup white wine
- 1½ lb lean ground pork
- 1½ lb lean ground beef
- 1 (12-oz) can evaporated milk
- 1 bay leaf
- 1 tsp kosher salt
- 1 tsp pepper
Instructions
- Cook onion, carrots, and garlic in hot oil in a large skillet over medium-high heat 4 minutes. Add tomato paste; cook 2 to 3 minutes, stirring often. Add wine, and cook 2 minutes. Transfer mixture to a 5-or 6-quart slow cooker.
- Add pork and beef to skillet; cook 5 minutes over medium-high heat or until browned and crumbly.
- Add meat, evaporated milk, bay leaf, salt, and pepper to cooker; stir. Cover and cook on LOW 4 hours; remove bay leaf before serving.

- 2 (14-oz) pkg zucchini spirals
- 2 tsp Italian seasoning
- ½ tsp salt
- ½ tsp pepper
- 2 Tbsp olive oil
Side Dish Instructions
- Cook garlic, zucchini, seasoning, salt, and pepper in hot oil in a large nonstick skillet over medium-high heat 8 minutes or until zucchini is tender, adding 1 to 2 Tbsp water, if necessary, to avoid sticking.
