Juicy Sirloin Steak
Sour Cream Mashed Potatoes and Asparagus
Ingredients
- 1½ lb boneless top sirloin steak
- 1 clove garlic, cut in half
- 1 Tbsp olive oil
- ¼ tsp salt
- ¼ tsp pepper
- 1 lemon, cut into wedges
Instructions
- Rub both sides of steak with cut sides of garlic.
- Cook steak in hot oil in a large skillet over medium-high heat 4 minutes per side or until desired degree of doneness. Sprinkle with salt and pepper.
- Let stand 5 minutes before slicing. Serve with lemon wedges.
Side Dish Ingredients
- 2 lb red potatoes, cut into 1-inch chunks
- ¾ cup reduced-fat sour cream
- 1½ Tbsp extra virgin olive oil
- 2 cloves garlic, minced
- 1 tsp salt, divided
- ½ tsp pepper
- 1½ cups water
- 1½ lb asparagus, trimmed
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a large Dutch oven. Simmer 20 minutes or until tender; drain. Mash potatoes to desired consistency with sour cream, oil, garlic, and ½ tsp each salt and pepper.
- Meanwhile, bring water to a boil in a large skillet over medium-high heat.
- Add asparagus, and return to a boil. Reduce heat to medium-low; cook 2 minutes or until crisp-tender. Drain and sprinkle with ½ tsp salt.
