Juicy Sirloin Steak

Sour Cream Mashed Potatoes and Asparagus

Ingredients

  • 1½ lb boneless top sirloin steak
  • 1 clove garlic, cut in half
  • 1 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 lemon, cut into wedges

Instructions

  1. Rub both sides of steak with cut sides of garlic.
  2. Cook steak in hot oil in a large skillet over medium-high heat 4 minutes per side or until desired degree of doneness. Sprinkle with salt and pepper.
  3. Let stand 5 minutes before slicing. Serve with lemon wedges.

Side Dish Ingredients

  • 2 lb red potatoes, cut into 1-inch chunks
  • ¾ cup reduced-fat sour cream
  • 1½ Tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 tsp salt, divided
  • ½ tsp pepper
  • 1½ cups water
  • 1½ lb asparagus, trimmed

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a large Dutch oven. Simmer 20 minutes or until tender; drain. Mash potatoes to desired consistency with sour cream, oil, garlic, and ½ tsp each salt and pepper.
  2. Meanwhile, bring water to a boil in a large skillet over medium-high heat.
  3. Add asparagus, and return to a boil. Reduce heat to medium-low; cook 2 minutes or until crisp-tender. Drain and sprinkle with ½ tsp salt.
