Artichoke-Tuna Pasta Salad

Ingredients

  • 2 oz whole-grain rotini pasta
  • 1 cup grape tomatoes, halved
  • ¾ cup quartered artichoke hearts, drained
  • ½ cup chopped green bell pepper
  • ¼ cup crumbled reduced-fat feta cheese
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh basil
  • 2 Tbsp reduced-fat Italian dressing
  • 1 (2.6-oz) pouch low-sodium albacore tuna, flaked

Instructions

  1. Cook pasta according to package directions; place in colander run cold water over pasta to cool. Drain well.
  2. Meanwhile, combine tomatoes, artichoke hearts, bell pepper, cheese, onion, basil and dressing in a large bowl; toss well.
  3. Divide pasta mixture between plates; sprinkle evenly with the tuna.

Side Dish Ingredients

  • 2 celery stalks, cut into 3-inch pieces

Side Dish Instructions

  1. Serve celery alongside salad.
