Bacon-Parmesan Cauliflower "Grits" with Fried Eggs

Ingredients

  • 4 slices bacon
  • 4 large eggs
  • ½ (12-oz) pkg frozen riced cauliflower
  • ⅛ tsp garlic powder
  • ⅛ tsp pepper
  • ½ Tbsp olive oil
  • 2 Tbsp low-sodium chicken broth
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Cook bacon in a large skillet over medium heat 6 to 8 minutes or until crisp. Drain, reserving 1 Tbsp drippings in skillet. Crumble bacon.
  2. Crack eggs into hot drippings in skillet. Cover and cook 3 minutes or until whites are set and yolks are cooked to desired doneness.
  3. Cook cauliflower, garlic powder, and pepper in hot oil in a small saucepan over medium heat 2 to 3 minutes, stirring often.
  4. Stir in broth; cook 12 minutes or until liquid is evaporated, stirring often. Stir in cheese and crumbled bacon.
  5. Divide "grits" between 2 bowls; top with eggs.
