Quick Chicken and Dumplings

Ingredients
- 1 (32-oz) carton low-sodium chicken broth
- 2 cups shredded chicken (from Simple Chicken recipe)
- ½ (10.5-oz) can cream of chicken soup
- ½ (12-oz) pkg frozen mixed vegetables
- ¼ tsp poultry seasoning
- ¼ tsp pepper
- 1 (7.5-oz) can refrigerated buttermilk biscuits, quartered
- 2 Tbsp chopped fresh parsley
Instructions
- Bring broth, chicken, soup, vegetables, poultry seasoning, and pepper to a boil over medium-high heat in a large saucepan; reduce heat and simmer.
- Roll out quartered biscuits, and drop, one at a time, into simmering mixture.
- Cover, and simmer, 15 to 20 minutes, stirring occasionally, until biscuits are cooked through.
