Pesto Couscous Salad

Ingredients

  • 1 cup whole wheat Israeli (pearl) couscous
  • ½ (6-oz) jar pesto
  • 6 oz fresh mozzarella cheese pearls
  • 1 pint grape tomatoes, halved
  • ½ cup chopped fresh basil
  • Balsamic glaze (optional)

Instructions

  1. Cook couscous according to package directions; rinse under cold water to cool. Stir together couscous and pesto in a serving bowl.
  2. Add cheese, tomatoes, and basil; toss. Serve drizzled with balsamic glaze, if desired.
