Spinach, Salmon and Citrus Salad

Ingredients

  • 1 (1-lb) salmon fillet
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (10-oz) pkg baby spinach
  • 1 grapefruit, peeled and segmented
  • 1 orange, peeled and segmented
  • 1 avocado, sliced
  • ½ small red onion, halved and thinly sliced
  • ⅓ cup creamy poppy seed dressing

Instructions

  1. Preheat broiler. Sprinkle salmon with garlic powder, salt, and pepper. Broil 7 to 10 minutes or until salmon flakes with a fork.
  2. Break salmon into large pieces using a fork. Divide spinach, salmon, grapefruit, orange, avocado, and onion among 4 serving plates; drizzle with dressing.
