Spinach, Salmon and Citrus Salad
Ingredients
- 1 (1-lb) salmon fillet
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- 1 (10-oz) pkg baby spinach
- 1 grapefruit, peeled and segmented
- 1 orange, peeled and segmented
- 1 avocado, sliced
- ½ small red onion, halved and thinly sliced
- ⅓ cup creamy poppy seed dressing
Instructions
- Preheat broiler. Sprinkle salmon with garlic powder, salt, and pepper. Broil 7 to 10 minutes or until salmon flakes with a fork.
- Break salmon into large pieces using a fork. Divide spinach, salmon, grapefruit, orange, avocado, and onion among 4 serving plates; drizzle with dressing.
