Mushroom and Cauliflower Pork

Ingredients

  • 1 (12-oz) pkg cauliflower florets
  • 2 lb boneless center cut pork loin chops
  • ½ tsp salt
  • ½ tsp pepper
  • 4 Tbsp butter
  • 1 (16-oz) pkg sliced mushrooms
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • ½ cup low-sodium chicken broth (or use vegetable broth)
  • 1 Tbsp chopped fresh thyme (or use 1 tsp dried)

Instructions

  1. Cook cauliflower according to package directions.
  2. Sprinkle pork with salt and pepper. Cook pork in a large nonstick skillet coated with cooking spray over medium-high heat 4 to 5 minutes per side or until done.
  3. Meanwhile, melt butter in another large skillet. Add mushrooms, onion, and garlic; cook 8 minutes or until browned. Add cauliflower, pork, broth, and thyme; cook 2 minutes or until thoroughly heated.

Side Dish Ingredients

  • 2 (24-oz) pkg refrigerated mashed sweet potatoes
  • 1 Tbsp chopped fresh thyme

Side Dish Instructions

  1. Cook potatoes according to package directions. Transfer to a bowl; stir in thyme.
