Mushroom and Cauliflower Pork
Mashed Sweet PotatoesIngredients
- 1 (12-oz) pkg cauliflower florets
- 2 lb boneless center cut pork loin chops
- ½ tsp salt
- ½ tsp pepper
- 4 Tbsp butter
- 1 (16-oz) pkg sliced mushrooms
- 1 onion, chopped
- 4 cloves garlic, minced
- ½ cup low-sodium chicken broth (or use vegetable broth)
- 1 Tbsp chopped fresh thyme (or use 1 tsp dried)
Instructions
- Cook cauliflower according to package directions.
- Sprinkle pork with salt and pepper. Cook pork in a large nonstick skillet coated with cooking spray over medium-high heat 4 to 5 minutes per side or until done.
- Meanwhile, melt butter in another large skillet. Add mushrooms, onion, and garlic; cook 8 minutes or until browned. Add cauliflower, pork, broth, and thyme; cook 2 minutes or until thoroughly heated.

- 2 (24-oz) pkg refrigerated mashed sweet potatoes
- 1 Tbsp chopped fresh thyme
Side Dish Instructions
- Cook potatoes according to package directions. Transfer to a bowl; stir in thyme.
