Ingredients

  • 2 lb peeled and deveined, large raw shrimp
  • ¼ cup lime juice, divided
  • 3 Tbsp olive oil, divided
  • 3 Tbsp chopped fresh mint, divided
  • 2 cups chopped pineapple

Instructions

  1. Toss together shrimp, 2 Tbsp lime juice, 2 Tbsp oil, and 2 Tbsp mint in a large bowl. Sprinkle with salt and pepper, if desired. Set aside.
  2. Toss pineapple with 2 Tbsp lime juice and 1 Tbsp mint. Cook pineapple in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until browned.
  3. Add shrimp to skillet; cook 3 minutes or until shrimp turn pink.

Side Dish Ingredients

  • 2 (3.5-oz) pkg boil-in-bag brown rice
  • 1 (15-oz) can black beans, drained and rinsed
  • ¼ cup chopped fresh cilantro
  • 2 Tbsp olive oil
  • ½ tsp garlic powder

Side Dish Instructions

  1. Cook rice according to package directions. Stir in beans, cilantro, oil, and garlic powder.
