Mojito Shrimp
Black Bean and Cilantro Rice

Ingredients
- 2 lb peeled and deveined, large raw shrimp
- ¼ cup lime juice, divided
- 3 Tbsp olive oil, divided
- 3 Tbsp chopped fresh mint, divided
- 2 cups chopped pineapple
Instructions
- Toss together shrimp, 2 Tbsp lime juice, 2 Tbsp oil, and 2 Tbsp mint in a large bowl. Sprinkle with salt and pepper, if desired. Set aside.
- Toss pineapple with 2 Tbsp lime juice and 1 Tbsp mint. Cook pineapple in 1 Tbsp hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until browned.
- Add shrimp to skillet; cook 3 minutes or until shrimp turn pink.
Side Dish Ingredients
- 2 (3.5-oz) pkg boil-in-bag brown rice
- 1 (15-oz) can black beans, drained and rinsed
- ¼ cup chopped fresh cilantro
- 2 Tbsp olive oil
- ½ tsp garlic powder
Side Dish Instructions
- Cook rice according to package directions. Stir in beans, cilantro, oil, and garlic powder.
