Tofu-Quinoa Stir-Fry

Ingredients
- 3 (3.5-oz) pkg boil-in-bag quinoa
- 2 (12-oz) pkg stir-fry medley (broccoli, carrots, and snow peas)
- 1 (14-oz) pkg extra-firm tofu, cubed
- 3 Tbsp olive oil
- 3 large eggs, lightly beaten
- ¼ cup low-sodium soy sauce
- 2 green onions, thinly sliced
- ½ cup roasted, lightly salted peanuts
Instructions
- Cook quinoa and vegetables according to package directions.
- Meanwhile, cook tofu in hot oil in a large skillet over medium-high heat 8 minutes or until browned. Stir in quinoa and vegetables; toss.
- Push mixture to side of skillet. Add beaten eggs to center of skillet; cook, stirring constantly, until scrambled. Combine eggs with quinoa mixture. Stir in soy sauce and onions. Sprinkle with nuts.
