Ingredients

  • 3 (3.5-oz) pkg boil-in-bag quinoa
  • 2 (12-oz) pkg stir-fry medley (broccoli, carrots, and snow peas)
  • 1 (14-oz) pkg extra-firm tofu, cubed
  • 3 Tbsp olive oil
  • 3 large eggs, lightly beaten
  • ¼ cup low-sodium soy sauce
  • 2 green onions, thinly sliced
  • ½ cup roasted, lightly salted peanuts

Instructions

  1. Cook quinoa and vegetables according to package directions.
  2. Meanwhile, cook tofu in hot oil in a large skillet over medium-high heat 8 minutes or until browned. Stir in quinoa and vegetables; toss.
  3. Push mixture to side of skillet. Add beaten eggs to center of skillet; cook, stirring constantly, until scrambled. Combine eggs with quinoa mixture. Stir in soy sauce and onions. Sprinkle with nuts.
