Smashed Avocado and Bacon Waffles

Ingredients
- 4 slices center cut bacon, chopped
- 1 large avocado
- ¼ tsp salt
- ¼ tsp pepper
- ½ Tbsp lemon juice
- 2 Tbsp butter, divided
- 4 frozen multigrain waffles, thawed
- 1 Roma tomato, thinly sliced
- 2 Tbsp fresh basil leaves
- Balsamic glaze (optional)
Instructions
- Cook bacon in a large skillet over medium heat until crisp; drain on paper towels .
- Meanwhile, mash avocado with a fork to desired consistency; stir in lemon juice, salt, and pepper.
- Melt 1 Tbsp butter in a large nonstick skillet over medium-high heat; add 2 waffles, and cook 3 to 4 minutes per side or until browned and crisp. Repeat with remaining butter and waffles.
- Spread avocado mixture over waffles. Top with tomatoes, bacon, and basil leaves. Drizzle with balsamic glaze, if desired.
