Smashed Avocado and Bacon Waffles

Ingredients

  • 4 slices center cut bacon, chopped
  • 1 large avocado
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ Tbsp lemon juice
  • 2 Tbsp butter, divided
  • 4 frozen multigrain waffles, thawed
  • 1 Roma tomato, thinly sliced
  • 2 Tbsp fresh basil leaves
  • Balsamic glaze (optional)

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain on paper towels .
  2. Meanwhile, mash avocado with a fork to desired consistency; stir in lemon juice, salt, and pepper.
  3. Melt 1 Tbsp butter in a large nonstick skillet over medium-high heat; add 2 waffles, and cook 3 to 4 minutes per side or until browned and crisp. Repeat with remaining butter and waffles.
  4. Spread avocado mixture over waffles. Top with tomatoes, bacon, and basil leaves. Drizzle with balsamic glaze, if desired.
