Chicken Curry Casserole

Ingredients

  • 1½ cups long-grain white rice
  • 2 lb boneless, skinless chicken breasts, cubed
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 2 Tbsp olive oil
  • 1 (10.75-oz) can cream of chicken soup
  • 1 (10.75-oz) can cream of celery soup
  • 1 Tbsp curry powder
  • 1 (8-oz) carton sour cream
  • 1 cup crushed round buttery crackers

Instructions

  1. Cook rice according to package directions; spread in an even layer in a lightly greased 13-x 9-inch baking dish.
  2. Meanwhile, preheat oven to 350°F. Cook chicken, celery, and onion in hot oil in a large, deep skillet over medium-high heat until chicken is done. Stir in soups, curry powder, and sour cream; season lightly with salt and pepper.
  3. Spoon mixture over rice in dish; sprinkle with crushed crackers. Bake 30 minutes or until hot and bubbly.
