Sabra Roasted Garlic Hummus

Ingredients

  • 2 (15-oz) cans chickpeas, drained and rinsed
  • ¼ cup chopped fresh parsley
  • 2½ Tbsp lemon juice
  • 1 tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tsp minced garlic
  • 1 large egg
  • ½ cup whole wheat panko breadcrumbs
  • 3 Tbsp olive oil
  • 1 (8-oz) container refrigerated tzatziki sauce

Instructions

  1. Process chickpeas, parsley, lemon juice, cumin, salt, pepper, garlic, and egg in a food processor until smooth, scraping sides as needed. Stir in panko.
  2. Shape chickpea mixture into 12 patties. Cook patties, in batches, in hot oil in a large skillet over medium-high heat 3 minutes per side or until golden and thoroughly heated. Serve with tzatziki sauce.

  • 1½ cups whole wheat couscous
  • 1 Tbsp extra virgin olive oil
  • ½ pint grape tomatoes, chopped
  • ¼ cup chopped fresh parsley
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook couscous according to package directions; toss with remaining ingredients.
