Sabra Roasted Garlic Hummus
Ingredients
- 2 (15-oz) cans chickpeas, drained and rinsed
- ¼ cup chopped fresh parsley
- 2½ Tbsp lemon juice
- 1 tsp ground cumin
- ½ tsp salt
- ½ tsp pepper
- 2 tsp minced garlic
- 1 large egg
- ½ cup whole wheat panko breadcrumbs
- 3 Tbsp olive oil
- 1 (8-oz) container refrigerated tzatziki sauce
Instructions
- Process chickpeas, parsley, lemon juice, cumin, salt, pepper, garlic, and egg in a food processor until smooth, scraping sides as needed. Stir in panko.
- Shape chickpea mixture into 12 patties. Cook patties, in batches, in hot oil in a large skillet over medium-high heat 3 minutes per side or until golden and thoroughly heated. Serve with tzatziki sauce.

- 1½ cups whole wheat couscous
- 1 Tbsp extra virgin olive oil
- ½ pint grape tomatoes, chopped
- ¼ cup chopped fresh parsley
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook couscous according to package directions; toss with remaining ingredients.
