Egg Roll in a Bowl

Ingredients
- 2 lb ground beef
- 1 (8-oz) pkg sliced mushrooms
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 (16-oz) pkg tricolor coleslaw
- 4 green onions, chopped
- ½ cup low-sodium soy sauce
- 2 Tbsp sesame oil
- 1 Tbsp grated ginger
- 1 Tbsp rice vinegar
- 2 tsp Sriracha hot sauce
- ½ cup chopped fresh basil
Instructions
- Cook beef, mushrooms, onion, and garlic in a large nonstick skillet over medium heat, stirring until beef is browned and crumbly. Drain and return to skillet. Stir in coleslaw and green onions.
- Whisk together soy sauce, oil, ginger, vinegar, and Sriracha sauce. Add to skillet. Cook 5 minutes or until cabbage is wilted; stir in basil.
