BLT Fried Eggs

Ingredients

  • 4 slices bacon
  • 8 large eggs
  • 1½ cups baby arugula
  • 1 pint grape tomatoes, halved
  • 2 tsp red wine vinegar

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp; drain. Place drippings in a small mixing bowl; set aside. Crumble bacon.
  2. Crack 4 eggs into hot skillet over medium heat. Cover and cook 2 to 3 minutes or until whites are set and yolks are cooked to desired doneness. Sprinkle with salt and pepper, if desired. Remove from skillet. Repeat procedure with remaining eggs.
  3. Combine arugula, tomatoes, and bacon in a large bowl. Whisk vinegar into reserved drippings. Drizzle over arugula; toss.
  4. Spoon White Cheddar "Grits" recipe into 4 bowls; top each bowl with 2 eggs and arugula mixture.

Side Dish Ingredients

  • 2 (12-oz) pkg frozen riced cauliflower
  • 1 cup shredded white Cheddar cheese
  • 2 Tbsp butter
  • ½ tsp garlic salt

Side Dish Instructions

  1. Cook cauliflower rice according to package directions. Stir together cauliflower rice, cheese, butter, and garlic salt in a bowl.
