Easy Greek Chicken
Mediterranean Salad and Mashed CauliflowerIngredients
- 2 lb boneless, skinless chicken breasts
- 4 Tbsp olive oil, divided
- 1 Tbsp Greek seasoning
- 1 pint grape tomatoes, halved
- ½ cup halved kalamata olives
- ¾ cup crumbled feta cheese
- ¼ tsp garlic salt
- Sliced pepperoncini (optional)
Instructions
- Preheat oven to 400°F. Toss chicken with 3 Tbsp oil and seasoning in a 13- x 9-inch baking dish. Bake 20 minutes or until chicken is done.
- Meanwhile, combine tomatoes, olives, cheese, garlic salt, 1 Tbsp oil, and, if desired, pepperoncini. Serve chicken with tomato mixture.

- 1 (20-oz) pkg frozen mashed cauliflower
- 5 cups chopped romaine lettuce
- ½ cup sliced cucumber
- ¼ cup sliced red onion
- ½ cup Greek vinaigrette
Side Dish Instructions
- Heat cauliflower according to package directions.
- Combine lettuce, cucumber, and onion in a large bowl. Drizzle with dressing; toss.
