Easy Greek Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 4 Tbsp olive oil, divided
  • 1 Tbsp Greek seasoning
  • 1 pint grape tomatoes, halved
  • ½ cup halved kalamata olives
  • ¾ cup crumbled feta cheese
  • ¼ tsp garlic salt
  • Sliced pepperoncini (optional)

Instructions

  1. Preheat oven to 400°F. Toss chicken with 3 Tbsp oil and seasoning in a 13- x 9-inch baking dish. Bake 20 minutes or until chicken is done.
  2. Meanwhile, combine tomatoes, olives, cheese, garlic salt, 1 Tbsp oil, and, if desired, pepperoncini. Serve chicken with tomato mixture.

Side Dish Ingredients

  • 1 (20-oz) pkg frozen mashed cauliflower
  • 5 cups chopped romaine lettuce
  • ½ cup sliced cucumber
  • ¼ cup sliced red onion
  • ½ cup Greek vinaigrette

Side Dish Instructions

  1. Heat cauliflower according to package directions.
  2. Combine lettuce, cucumber, and onion in a large bowl. Drizzle with dressing; toss.
