Tomato-Basil Baked Eggs with Goat Cheese

Ingredients
- 8 large eggs
- 1 tomato, seeded and chopped
- ½ tsp salt
- ½ tsp pepper
- ½ cup crumbled goat cheese (or use feta cheese)
- 2 Tbsp chopped fresh basil
Instructions
- Preheat oven to 350°F. Coat 4 muffin cups or 4 (6- to 8-oz) ramekins with cooking spray. Crack 2 eggs in each muffin cup or ramekin.
- Sprinkle with tomato, salt, and pepper.
- Bake 15 to 18 minutes or until egg whites are set and yolks are cooked to desired doneness. Sprinkle with cheese and basil before serving.
