Glazed Pork Chops with Apples

Ingredients

  • 6 (1½-inch-thick) boneless pork loin chops
  • ¼ cup coconut oil, divided
  • 3 apples, cored and thinly sliced (such as Gala)
  • 1 sweet onion, thinly sliced
  • ½ cup organic chicken broth
  • ⅓ cup balsamic vinegar
  • ½ tsp dried crushed rosemary

Instructions

  1. Season pork lightly with salt and pepper. Melt 2 Tbsp oil in a large skillet over medium-high heat; add pork, and cook 3 to 4 minutes per side or until browned. Remove from skillet.
  2. Melt 2 Tbsp oil in skillet; add apples and onion. Cook over medium heat 8 minutes. Stir in broth, vinegar, and rosemary; bring to a boil, reduce heat, and simmer 5 minutes.
  3. Return pork to skillet; cook 5 minutes or until pork is done and sauce is thickened.

Side Dish Ingredients

  • 2½ lb turnips, peeled and quartered
  • ¾ cup almond milk
  • 3 Tbsp extra virgin olive oil (or use avocado oil)
  • 1 tsp salt
  • 1 tsp pepper
  • ½ tsp garlic powder
  • ½ tsp dried thyme

Side Dish Instructions

  1. Bring turnips and salted water to cover to a boil in a saucepan; cook 15 minutes or until tender. Drain.
  2. Mash turnips with a potato masher. Stir in almond milk, oil, salt, pepper, garlic powder, and thyme. Mash until blended.
