Italian Tuna Cakes
Tangy Broccoli-Parmesan Salad
Ingredients
- 2 slices bacon
- 2 (5-oz) cans wild-caught albacore tuna, drained
- 1 large egg white
- 1 Tbsp almond flour
- 1 Tbsp mayonnaise
- 1 Tbsp chopped fresh parsley
- ½ Tbsp Italian seasoning
- 1 tsp lemon zest
- ¼ tsp garlic powder
- ¼ tsp pepper
- 1 Tbsp vegetable oil
Instructions
- Cook bacon in a large cast-iron or nonstick skillet until crisp. Remove from skillet, reserving drippings. Crumble bacon.
- Combine tuna, bacon, egg white, flour, mayonnaise, parsley, seasoning, zest, garlic powder, and pepper; shape mixture into 4 patties.
- Add oil to drippings in skillet. Cook patties in hot oil over medium heat 3 to 4 minutes per side or until done.
Side Dish Ingredients
- 2 cups broccoli florets
- 2 Tbsp chopped red onion
- 2½ Tbsp olive oil vinaigrette
- ½ Tbsp lemon juice
- ⅛ tsp pepper
- 2 Tbsp freshly grated Parmesan cheese
Side Dish Instructions
- Combine broccoli and onion in a bowl.
- Whisk together vinaigrette, lemon juice, and pepper; pour over broccoli. Toss; sprinkle with cheese. Refrigerate 30 minutes before serving.
