Italian Tuna Cakes

Tangy Broccoli-Parmesan Salad

Ingredients

  • 2 slices bacon
  • 2 (5-oz) cans wild-caught albacore tuna, drained
  • 1 large egg white
  • 1 Tbsp almond flour
  • 1 Tbsp mayonnaise
  • 1 Tbsp chopped fresh parsley
  • ½ Tbsp Italian seasoning
  • 1 tsp lemon zest
  • ¼ tsp garlic powder
  • ¼ tsp pepper
  • 1 Tbsp vegetable oil

Instructions

  1. Cook bacon in a large cast-iron or nonstick skillet until crisp. Remove from skillet, reserving drippings. Crumble bacon.
  2. Combine tuna, bacon, egg white, flour, mayonnaise, parsley, seasoning, zest, garlic powder, and pepper; shape mixture into 4 patties.
  3. Add oil to drippings in skillet. Cook patties in hot oil over medium heat 3 to 4 minutes per side or until done.

Side Dish Ingredients

  • 2 cups broccoli florets
  • 2 Tbsp chopped red onion
  • 2½ Tbsp olive oil vinaigrette
  • ½ Tbsp lemon juice
  • ⅛ tsp pepper
  • 2 Tbsp freshly grated Parmesan cheese

Side Dish Instructions

  1. Combine broccoli and onion in a bowl.
  2. Whisk together vinaigrette, lemon juice, and pepper; pour over broccoli. Toss; sprinkle with cheese. Refrigerate 30 minutes before serving.
