Ingredients

  • ½ (16-oz) pkg ground Italian sausage
  • ½ small onion, chopped
  • 1 clove garlic, minced
  • ½ (32-oz) carton low-sodium chicken broth
  • ¾ cup no-salt-added diced tomatoes
  • ¾ cup no-salt-added tomato sauce
  • 1 Tbsp no-salt-added tomato paste
  • ½ (3.5-oz) pkg sliced pepperoni, chopped
  • 1 tsp Italian seasoning
  • ¾ cup shredded mozzarella cheese

Instructions

  1. Cook sausage, onion, and garlic in a saucepan over medium heat 8 to 10 minutes or until sausage is browned and crumbly; drain well, and return to pot.
  2. Stir in broth, tomatoes, tomato sauce, tomato paste, pepperoni, and Italianseasoning. Bring to a boil; reduce heat, and simmer 20 minutes. Stir in cheese just before serving.
  3. Refrigerate extra serving for another meal.

Side Dish Ingredients

  • 2½ cups chopped romaine lettuce
  • ¼ cup olive oil vinaigrette
  • 2 Tbsp freshly grated Parmesan cheese

Side Dish Instructions

  1. Toss lettuce with dressing; sprinkle with cheese.
