Onion-Topped Sausage and Potato Casserole

Ingredients

  • 1 (16-oz) pkg ground Italian sausage
  • 1 cup chopped onion
  • 2 (14.5-oz) cans fire-roasted diced tomatoes with garlic
  • ½ tsp garlic powder
  • ½ tsp dried basil
  • 1 (24-oz) pkg refrigerated garlic mashed potatoes
  • 1 (8-oz) pkg shredded Italian-blend cheese
  • ¼ tsp Italian seasoning
  • 1 cup French fried onions

Instructions

  1. Preheat oven to 350°F. Cook sausage and onion in a large skillet over medium heat until sausage is browned and crumbly; drain well, and return to skillet.
  2. Add tomatoes, garlic powder, and basil; cook 5 minutes, stirring occasionally. Spoon into a lightly greased 11-x 7-inch baking dish.
  3. Stir together potatoes, cheese, and Italian seasoning. Mixture will be dry. Spoon over sausage mixture.
  4. Bake 35 to 40 minutes or until hot and bubbly. Top with fried onions, and bake 5 minutes longer.

  1. Steam green beans according to package directions; season with salt and pepper to taste.
