Grilled Caesar Chicken

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 cup Caesar dressing
  • ¼ cup olive oil
  • 1 tsp garlic powder
  • ½ cup shredded Parmesan cheese

Instructions

  1. Cut chicken in half crosswise and pound to ½-inch-thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Stir together dressing, oil, and garlic powder in a shallow dish; add chicken, turning to coat. Cover, and refrigerate at least 4 hours or up to 2 days.
  3. Preheat grill or grill pan to medium-high heat. Remove chicken from marinade, discarding marinade.
  4. Grill chicken, covered, 5 to 6 minutes per side or until done. Sprinkle with cheese, and let stand 1 minute or until cheese is melted.

Side Dish Ingredients

  • 2 (10-oz) pkg frozen steamable corn in butter sauce
  • 2 (8-oz) pkg thin green beans

Side Dish Instructions

  1. Microwave corn according to package directions.
  2. Steam green beans according to package directions; season with salt and pepper to taste.
