Peanut Butter and Banana Waffles

Ingredients

  • 2¼ cups all-purpose flour
  • 3 Tbsp sugar
  • ½ Tbsp baking powder
  • ¾ tsp baking soda
  • ½ tsp salt
  • ¼ cup butter, melted
  • ⅓ cup creamy peanut butter
  • 2 cups buttermilk
  • 2 large eggs
  • 4 bananas, sliced
  • 1 (8-oz) bottle maple syrup

Instructions

  1. Whisk togsther flour, sugar, baking powder, baking soda, and salt in a large bowl.
  2. Process melted butter and peanut butter in a blender until combined. Add buttermilk and eggs, process until blended. Add to flour mixture, stirring just until combined.
  3. Spoon batter onto waffle iron according to manufacturer's directions; cook 2 to 3 minutes or until waffle is done (time will vary). Repeat.
  4. Divide waffles among 6 plates; top with bananas and syrup.

  • 1 (16-oz) pkg ground pork sausage

Side Dish Instructions

  1. Slice sausage, and cook in a large nonstick skillet over medium heat until no longer pink; drain.
