Philly Cheesesteak Skillet

Ingredients

  • 1 lb flank steak (or use skirt steak)
  • 1½ Tbsp olive oil, divided
  • 1 onion, sliced
  • 1 bell pepper (any color), sliced
  • ½ cup shredded Italian-blend cheese

Instructions

  1. Preheat broiler. Sprinkle steak with salt and pepper, if desired. Cook steak ½ Tbsp hot oil in a large skillet over medium-high heat 4 to 5 minutes per side or to desired doneness. Let stand 5 minutes; thinly slice across the grain.
  2. Meanwhile, cook onions and bell peppers in 1 Tbsp hot oil in a ovenproof skillet over medium-high heat 8 minutes or until tender.
  3. Add steak to vegetables, stirring to blend. Top with cheese. Broil 2 to 3 minutes or until melted.

Side Dish Ingredients

  • 3 Tbsp Ranch dressing
  • 1 Tbsp mayonnaise
  • ½ Tbsp white wine vinegar
  • ¼ tsp garlic salt
  • ½ (10-oz) pkg angel hair coleslaw

Side Dish Instructions

  1. Combine Ranch dressing, mayonnaise, vinegar, and garlic salt in a bowl. Stir in coleslaw; toss.
