Tomato and Red Onion Flank Steak

Ingredients
- 1½ lb flank steak
- 3 Tbsp olive oil
- ½ red onion, thinly sliced
- 2 Tbsp minced garlic
- 1½ cups grape tomatoes
- 2 Tbsp soy sauce
- 4 tsp red wine vinegar (or use balsamic vinegar)
Instructions
- Thinly slice steak diagonally across the grain into 1½-inch long strips. Season generously with salt and pepper.
- Cook steak in hot oil in a large skillet over medium-high heat 12 minutes or until browned on all sides, turning once or twice. Remove to a platter.
- Add onion and garlic to skillet. Cook 2 minutes. Add tomatoes, and cook 4 minutes longer or until onion is tender.
- Return steak to skillet. Add soy sauce and vinegar. Cook 1 minute, tossing to coat. Season with desired amount of salt and pepper.
Side Dish Ingredients
- 4 (1-oz) packets instant grits
- 1 cup shredded white Cheddar cheese (or use any shredded cheese)
Side Dish Instructions
- Cook grits according to package directions for microwave. Stir together all cooked grits and cheese in a bowl. Season with salt to taste.
