Tomato and Red Onion Flank Steak

Ingredients

  • 1½ lb flank steak
  • 3 Tbsp olive oil
  • ½ red onion, thinly sliced
  • 2 Tbsp minced garlic
  • 1½ cups grape tomatoes
  • 2 Tbsp soy sauce
  • 4 tsp red wine vinegar (or use balsamic vinegar)

Instructions

  1. Thinly slice steak diagonally across the grain into 1½-inch long strips. Season generously with salt and pepper.
  2. Cook steak in hot oil in a large skillet over medium-high heat 12 minutes or until browned on all sides, turning once or twice. Remove to a platter.
  3. Add onion and garlic to skillet. Cook 2 minutes. Add tomatoes, and cook 4 minutes longer or until onion is tender.
  4. Return steak to skillet. Add soy sauce and vinegar. Cook 1 minute, tossing to coat. Season with desired amount of salt and pepper.

Side Dish Ingredients

  • 4 (1-oz) packets instant grits
  • 1 cup shredded white Cheddar cheese (or use any shredded cheese)

Side Dish Instructions

  1. Cook grits according to package directions for microwave. Stir together all cooked grits and cheese in a bowl. Season with salt to taste.
