Browned Butter-Honey Chicken

Mashed Potatoes and Broccoli in Cheese Sauce

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ¼ cup butter
  • ¼ cup honey
  • 2 Tbsp lemon juice
  • ½ tsp garlic powder

Instructions

  1. Cut chicken in half crosswise and pound to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet; season lightly with salt and pepper.
  2. Melt butter in a large nonstick skillet over medium heat; let cook 2 minutes. Add chicken to skillet, and and cook 5 to 6 minutes per side or until done. Remove from skillet, and keep warm.
  3. Add honey, lemon juice, and garlic power to skillet. Cook 2 minutes, stirring occasionally. Divide chicken among 6 plates; spoon honey mixture over chicken.

Side Dish Ingredients

  • 1 (32-oz) pkg refrigerated mashed potatoes
  • 2 (10-oz) pkg frozen broccoli and cheese sauce (such as Green Giant)

Side Dish Instructions

  1. Heat mashed potatoes according to package directions.
  2. Microwave broccoli according to package directions.
